Slaw-Stuffed Peppers

12 whole green peppers

4 qts. water

cup salt

Slice tops off peppers and remove seeds.

Soak overnight in solution of 4 qts. water and cup salt.

 

 

2 medium heads cabbage, finely shredded

cup salt

Combine cabbage and cup salt.  Let stand overnight.

Drain well.

 

 Mix pimientos and cabbage.

1 (4 oz.) jar pimientos, diced

 

Fill peppers with mixture.

 Tie tops on with thread.  Put in 8 qt. crock.

 

 

5 cups sugar

6 cups water

6 cups cider vinegar

1 tsp. whole cloves

6 sticks cinnamon

1 Tbs. whole allspice

1 tsp. salt

Combine sugar, water, vinegar and spices in pan.  Bring to a boil.  Cook 10 minutes.  Pour hot solution on stuffed peppers and weight them down.

 Marinate at least one week. 

 

To serve cut peppers in quarters.  For smaller amount, half recipe and use 4 qt. crock.
