Long Soup Nancy

1-1/2 Tbs. veg. oil

8 oz. (or less) leftover pork

4-6 oz. cabbage, shredded

6 cups (3 cans) chicken broth

2 Tbs. soy sauce

1/2 tsp. minced fresh ginger

4 oz. Chinese style thin noodles

8 green onions, chopped

 

Heat oil.  Add pork and cabbage until done- about 5 minutes.  Add all but noodles and onions.  Bring to a boil.  Reduce heat.  Simmer 10 minutes.

Stir in noodles and onions.

Cook until noodles are tender.
