Turkey Gumbo Ya-Ya

In large cooking pan make a rue of 1/2 cup veg. oil

and 1/2 cup flour.  Brown on med heat.  To this rue

add:

(Dice or chunk all)

1 each green, red. yellow, and orange bell peppers

1 large onion

5 stalks celery

½ ring (8oz.) Kielbasa  sausage

1 summer sausage (small)

1 (12 oz. pkg.-4links) Andouille sausage

Stir to cover everything with a coating of rue.

Add the following:

4 cups left-over turkey, diced

1 tsp. garlic

2 tsp. Cajun seasoning

1-1/2 tsp. Emeril’s Seasoning, Original Essence

2 large (49.5 oz.) cans chicken broth or broth from

your turkey. Bring to a boil and then simmer 2 hours.

Add 8 oz. home-made style egg noodles.  When

noodles are done it’s ready to serve.

Notes:

1.     Andouille sausage – Aidell’s brand – I bought at Walmart.

2.     I used cooked, cubed chicken breast instead of turkey.
