Rhubarb Coffee Cake

(When rhubarb is fresh is when I crave this one!)

Preheat oven to 350.

 

1 cup sugar

1 egg

cup shortening

1 tsp. vanilla

Cream these together.

 

Then add:

 

1 cup sour milk OR buttermilk.  Dissolve 1 tsp. soda in the milk.

Then mix 2 cups flour and 1 tsp. salt and add alternately with the milk mixture.

Add 2 cups diced rhubarb and add 1 tsp. vanilla.  Mix well.

Put in 9 x 13 pan.

 Mix together and top with cup brown sugar and

1 tsp. cinnamon.

 

Bake for 45 minutes
